Speculaas Cake

A simple speculaas cake recipe inspired by Sinterklaas, a Dutch holiday which is celebrated on the 5th of December. This is a yummy and moist cake with speculaas flavour. The ‘speculaas’ spices are a mixture of ground cinnamon, nutmeg, coriander, cloves, white pepper, ginger, cardamom and aniseed. You can find the recipe for speculaas spices here.

Ingredients

  • 200 gram brown sugar
  • 200 gram butter (room temperature)
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 200 gram flour
  • Pinch of salt
  • 2 teaspoon baking powder
  • 4 teaspoon speculaas spices

Instructions

Preheat oven to 160 degrees Celsius

Cream butter and sugar together in a stand mixer (or hand mixer) for about 5 minutes

Add the eggs, one at the time. Mix well before the next egg goes in

Add the vanilla extract

In a separate bowl combine the flour, baking powder, salt and speculaas spices

Add the flour mixture to the sugar/butter mixture and mix well until combined. Don't over mix!

Pour the cake batter in a cake tin and bake for about 50 minutes, or until a cake tester comes out dry and clean. If not, bake for another 5-10 minutes.

Let the cake cool down in the tin for about 10 minutes before taking it out to cool completely on a wire rack.
