Yummy Pikelets. I’ve never heard of them before until recently. They are like Scottish pancakes or flat crumpets. Delicious with some strawberry jam and cream.
Add the dry ingredients to a bowl and whisk until combined Add the wet ingredients to a different bowl and mix until combined Add the wet to the dry and whisk until you get a smooth, thick-ish batter (needs to slide off a spoon) Heat a lightly buttered non-stick pan on a medium heat Drop a tablespoon of the mixture into the pan (allowing room to turn the pikelets) When the pikelets bubble, turn and cook the other side Remove from pan and keep warm in a clean tea towel Serve with jam and creamIngredients
