Delicious fluffy blueberry pancakes. The blueberry are easily replaceable with, for example, banana or chocolate chips.
Ingredients
- 225g blueberries, fresh or frozen (NOT thawed)
- Butter for pan
- 150g all purpose flour
- 2 tbsp white sugar
- 2 tsp baking powder
- 1/4 tsp baking soda
- Pinch of salt
- 1 egg
- 30g melted butter
- 185ml milk
- 1 tsp vanilla extract
- 1 tsp white vinegar

Whisk the dry ingredients

Add the wet ingredients and stir until combined

Stir through the blueberries OR add blueberries into the batter in the pan

(I) use an ice cream scoop (about 1/4 cup) to add a dollop of batter in to the pan. Add blueberries

Bake on medium heat for about 1 1/2 minutes until bubbles form on the top and bottom is mostly golden

Flip with confidence and bake for another minute.

Keep pancakes warm on a rack in the oven (100 degrees Celsius) in a single layer, do not stack
