Chocolate Coconut Slice

This soft, chewy chocolate coconut slice is a favourite in this house. I mean, chocolate and coconut, best of both worlds! This is an easy and fast recipe.

Chewy Chocolate Coconut Slice

Ingredients

  • Coconut Slice
  • 125g butter, melted
  • 200g soft brown sugar
  • 1 egg, room temp, lightly beaten
  • 1 tsp vanilla extract
  • 110g flour
  • 15g (2 tbsp) cocoa powder
  • 1 tsp instant espresso or coffee (optional)
  • Pinch of salt
  • 70 g desiccated coconut
  • Topping
  • 100g chocolate (dark/milk)
  • 45g butter
  • 1 tbsp golden syrup
  • Desiccated coconut to decorate

Instructions

Preheat oven to 175°C (350°F)

Grease (with butter or oil) a slice pan/brownie pan and add the baking paper (line the pan with overhang, that way it will be easier to lift the slice out of the pan).

Combine with a whisk the melted butter, brown sugar, egg and vanilla in a bowl.

Sift flour, cocoa, instant coffee (if using) and a pinch of salt in a separate bowl.

Add the flour to butter mixture and fold in until you don't see any flour.

Stir in the desiccated coconut.

Spread mixture in the baking pan and bake for about 20 to 25 minutes.

Leave the slice in the baking pan while making the topping.

Add the chocolate, butter and golden (or maple) syrup to a microwave safe bowl, melt and pour over the warm slice.

Decorate with extra desiccated coconut.

Let cool completely in the fridge before cutting.

Notes

To make it a more cake texture, add 1 tsp baking powder.
